3 1/2 -4 lb. chicken
Potato or onion in neck cavity

Apply rub on seasoning- 1/2 can beer. Cook with indirect heat on a charcoal or gas grill. Cooking time 1 1/4-2 hrs. I cook it in the oven.

1. Thaw & clean a whole chicken, removing giblets from cavity. Rinse chicken inside & out under cold water. Drain & blot dry with paper towels. generously apply poultry seasoning on. I also use salt & pepper.
2. Using a 12 oz can of your favorite beer. pour out 1/2 of contents. Place half empty can in the chicken rack. You can also use cola, lemon lime soda or root beer.
3. Place chicken over the can of beer. To prevent flare up place chicken rack in disposable pie pan & add 1/4 cup water. Cook @ 400

For Charcoal grills: After coals are hot slide them to the edges or make an open ring. Add about 6 fresh coals every 30 minutes.
