4 medium potatoes
1 tsp salt
3 T melted butter
3 T chopped fresh herbs such as parsley, chives, thyme or sage or
3 tsp dried herbs of your choice
1/2 c grated Cheddar cheese
2 T Parmesan cheese

Directions:
Directions:
Peel potatoes if the skin is tough, otherwise just scrub and rinse them. Cut potatoes into thin slices but not all the way through. Use a handle of a spoon to prevent the knife from cutting all the way through. Put potatoes in a baking dish. Fan them slightly. Sprinkle the salt and drizzle with butter. Sprinkle with herbs. Fanning the potatoes helps get the herbs and butter down inside the potato. Bake potatoes at 425F for about 50 minutes. Remove from oven. Sprinkle with cheeses. Bake potatoes for another 10 to 15 minutes until lightly browned, cheeses are melted and potatoes are soft inside. Check with a fork.
