- 2 cloves of garlic, crushed
- slices of onion, diced
- roma tomato, diced
- half a zucchini, diced
- 3 diced red potatoes
- tbsp. olive oil
- salt to taste
- pinch of oregano

Directions:
Directions:
1. Heat oil in pan, add crushed garlic, diced onions.
2. When caramelized, add potatoes and zucchini.
3. When almost fully cooked, add roma tomato, salt, oregano, and simmer for a few minutes under a lid before serving.
