3 poached, boneless chicken breasts, cut into bite-sized pieces
1/3 c. celery, diced (optional)
1/3 c. dried cherries
1/3 c. chopped pecans
2 green onions, finely minced
1/3 c. lowfat mayonnaise
Salt to taste
Cracked black pepper

Directions:
Directions:
In large bowl, combine ingredients, add mayonnaise and toss gently to blend flavors. Season with salt and pepper to taste. Refrigerate. To serve, spoon into lettuce leaves on a plate and garnish with parsley sprigs and pecan halves. Serve with crostini and fresh seasonal fruit.
