9 oz packet puff pie dough
2 red onions
1 red bell pepper
8 cherry tomatoes, halved
1/4 lb. mozzarella cheese, cut into chunks
8 sprigs thyme

Directions:
Directions:
Roll out the pie dough on a lightly floured surface to make 4 squares, each 3 inches wide. Using a sharp knife, trim edges of the dough, reserving the trimmings. Chill the dough squared in the refrigerator for about 30 minutes. Place the dough squares on a cookie sheet. Brush a little water along the edge of each square and use the reserved dough trimmings to make a room around each tart.

Cut the red onions into thin wedges and halve and seed the bell pepper. Place the onions and bell pepper in a roasted pan. Cook under a preheated broiler for 15 min. or until the bell pepper skin is blackened and charred. Place the roasted bell pepper halves in a plastic bag and set aside to sweat for 10 min., then peel off the skin and cut the flesh into strips.

Line the dough squares with foil. Bake in a preheated oven, 400 for 10 minutes. Remove the foil squares and bake the squares for another 5 min. Divide the onions, bell pepper strips, tomatoes, and cheese among the tarts and sprinkle with the fresh thyme. Return to the oven for 15 min. or until the tarts are golden and the cheese is melted. Serve hot or cold.
