12 jumbo shrimp, shelled, deveined, tails intact
(or 3/4 lb. large shrimp)
1 cup olive oil
3 tbsp. Marsala wine
2 tbsp. minced parsley
2 cloves garlic, crushed
3 fresh plum tomatoes, cut in sixths
1/2 tsp. salt
several grindings of fresh pepper
pasta or rice

Directions:
Directions:
Rinse the shrimp in cool water, pat dry. Mix the olive oil, wine, parsley, garlic, tomatoes, salt & pepper. Pour over the shrimp in a shallow dish. Cover and chill for 2-3 hours in the refrigerator, turning the shrimp once or twice in the marinade.
Place shrimp & marinade in a shallow baking pan and bake at 450F for EXACTLY 10 minutes.
serve over pasta or rice
