Ingredients:  
6 to 8 cups water
1 chicken bouillon cube per cup of water
5 medium potatoes
1/2 to 3/4 lb. Velveeta
1 (16 oz.) pkg. frozen mixed vegetables (broccoli, cauliflower and carrots)
1 chopped onion

Directions:
Directions:
Mix water and bouillon. Add potatoes. I boil potatoes with salt before I add them to the soup. Add cooked vegetables. Cook until soft. Add cheese. When cheese is melted, the soup is ready to serve.

This is easy to make and my kids love it. Don't substitute anything for Velveeta.
