4 med size jalapeno peppers 10 oz. cheddar cheese, grated 5 eggs, slightly beaten
Lightly grease 8 x 8 inch pan. Thinly slice peppers (seeds make it hotter) and arrange evenly in bottom of pan. Pour eggs over peppers. Sprinkle with cheese. Bake at 275 degrees for 45 minutes. Cool and cut into small squares.
