2 cups cooked penne noodles olive oil 1 cooked chicken breast 1 small onion -more or less 1 red pepper 1 cup sliced mushrooms 1 cup feta cheese 1/4 cup parmesan cheese 1 clove garlic
You can make this ahead & keep it in the fridge for the work week. Smother your cooked noodles with olive oil & add chopped chicken breast. Sautee' onion, red pepper & mushrooms for 5 minutes on a med heat & add to noodles. Throw in feta, parmesan & smashed garlic to the mix & refrigerate. Stir fry on a higher heat tossing constantly about 5 minutes & serve with salad!! mmm
You can double the recipe for leftovers & you may need more oil for stir frying. You could also substitute roasted tofu for the chicken or add your favorite veggies to change it up!
