"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

1 cup sugar
1 egg

Directions:
Combine ingredients well. Roll into 1" balls and place on ungreased cookie sheet. Press in a criss-cross pattern with a fork dipped in sugar. Bake at 350 8-10 minutes or until edges look dry. Do not over cook! Cool on pan for 2 minutes. Remove to a rack to finish cooling.

Personal Notes:
Personal Notes:
Brown sugar can be used in place of the sugar for a caramel flavored cookie.
For thumb print cookies: bake the cookies as directed, but instead of doing the criss-cross pattern with sugar, press a chocolate kiss into the hot cookies as soon as they come out of the oven.
