fresh green beans, a couple of handfuls
3 potatoes
1 cucumber
1 onion, cut into wedges
1 tomato, cut into wedges
garbanzo beans, optional
hard boiled eggs, optional

red wine vinegar, to taste
olive oil, to taste
salt and pepper

Directions:
Directions:
Rub sides and bottom of serving bowl with a garlic clove. Cook beans in about 1 inch salted water until just green. Drain in strainer, run under cold water, and dry well with paper towel.

Boil potatoes with skin on. Don't overcook. When cool, take skin off and cut into chunks.

Combine the rest of the ingredients. Add red wine vinegar and olive oil. Generously salt. Add alittle bit of pepper.

I serve with garbanzo beans and hard boiled eggs on the side.
