Chicken Broth – 4 cups
Shredded cooked chicken – 1 cup or one small can boneless white chicken
Water – 1 to 2 cups
Olive Oil – 2 teaspoons
Onion – 1 small diced
Carrot – 2 sliced thin
Fresh Spinach – 1 to 2 cups torn in pieces
Garlic powder - ½ teaspoon
Italian seasoning - 1 teaspoon
Black pepper ¼ teaspoon
Cheese tortellini – 1 prepared package

Directions:
Directions:
In large dutch oven over low heat: add olive oil and onion sauté until onion is translucent, then add garlic powder, Italian seasoning and black pepper and chicken. Saute another 2 minutes, and then add chicken broth, water and carrots. Simmer until carrots are just tender (about 8 minutes), then add tortellini and fresh spinach. Cover your pot and simmer for another 8 to 10 minutes. Serve in big bowls over croutons; Garnish with cheese if desired
