2 c. (8 oz.) shredded cheddar cheese 1 c. (4 oz.) shredded pepper Jack cheese 4 oz. cream cheese 1/2 c. mayonnaise 1/4 tsp. dried thyme 2 c. chopped sweet onions, divided
In a food processor, combine the cheeses, mayonnaise, thyme and 1 cup onions; cover and process until blended. Stir in remaining onions. Tranfer to a greased 3 cup baking dish. Bake uncovered at 375 º for 20-25 minutes or until bubbly. Serve with crackers.
