Ingredients:  
3 small potatoes, diced into 1 inch pieces.
1 small onion, diced.
1/2 green pepper, diced.
2 yellow squash, diced.
1/4 cup Olive Oil.
1/4 cup Parmesan Cheese.
Salt.
Pepper.

Directions:
Directions:
Cut potatoes, squash, onion, green pepper and put in large freezer or storage bag. Pour in Olive Oil and cheese. Seal bag and rotate to coat vegetables. Pour contents of bag onto baking sheet pan being sure to have a shallow layer. Sprinkle cheese over mixture and bake at 450 until crispy about 35 to 40 minutes.
