3 eggs
1 C oil
1 1/2 C sugar
2 C grated zucchini
2 tsp vanilla
2 C flour
1/4 tsp baking powder
2 tsp baking soda
3 tsp cinnamon
1 tsp salt

Directions:
Directions:
Mix together flour, baking powder, baking soda, cinnamon & salt. Stir in eggs, oil & sugar. Fold in zucchini.
Place in greased loaf pan. Bake at 375 for 40 - 50 minutes.
