1-2 lbs chicken tenderloin seasoning mix of choice 2 eggs beaten 1/2 c flour 1 c bread crumbs 1/2 c shredded Parmesan cheese 1/4 cup chopped walnuts or pine nuts toasted
1/4 inch oil in frying pan
season chicken tenderloin, season flour and put on paper plate. Season bread crumbs and add parm cheese and nuts and mix. dredge chicken in flour, then egg, then breadcrumbs fry in oil until golden brown
