1 lb. boneless chicken
2 T. butter
2-3 cups fresh or frozen vegetables
1-12 oz. can evaporated milk
1/2 cup grated Parmesan cheese
2 cloves garlic
1-8oz. package of linguine or other pasta
salt and pepper.

Directions:
Directions:
1) In large non-stick skillet, melt butter and add the pressed garlic.
2) Cut chicken into bite-sized pieces, sprinkle with salt and pepper and saute in skillet until lightly browned. Remove from pan and keep warm.
3) Cook vegetables in same pan until done the way you like them. Remove and reserve with the chicken.
4) Add the evaporated milk to the pan and boil until the liquid is reduced to about half. Meanwhile, cook the pasta according to package directions.
5) Add hot pasta, chicken, vegetables, and Parmesan to the hot milk and toss to coat all ingredients.
6) Serve with additional Parmesan and fresh ground pepper.
