1 cup flour 2 tbsp Sugar 2 tbsp baking powder 1/2 tsp salt 1 cup milk 2 tbsp vegetable oil 1 tsp vanilla extract, optional
Combine ingredients, stirring just until mixed. Preheat griddle. Pour batter by 1/4 cupfuls onto griddle. Cook until bubbly and light brown. Turn to cook other side. Serve immediately with syrup or favorite toppings.
Makes 8 pancakes, consider doubling or tripling recipe if feeding 4 or more people. These go fast!
