1/2 c margarine
1/2 c oil
2 c sugar
5 egg yolks
2 c sifted flour
1 c buttermilk
1 tsp vanilla
1 c coconut
1 c chopped pecans
5 egg whites beaten stiff

Directions:
Directions:
In mixer blend margarine and oil. Add sugar, then egg yolks one at a time until creamy. Alternately add flour and buttermilk. Add vanilla, coconut and pecans. Fold in egg whites. Bake in a greased and floured pan at 350 for 30-35 mins ( we use a 9x13 pan)

Icing:
1/4 c margarine softened
8 oz cream cheese softened
1 lb powdered sugar
1 tsp vanilla

blend margarine and cream cheese, add sugar and vanilla.
Frost cake and refrigerate

Christmas time favorite. Tastes great with boiled custard...mom and I pour it over like a sauce.
