1/2 C diced onion
1 garlic clove, minced
1/2 C each..chopped mushrooms; well-drained cooked chopped spinach; part-skim ricotta
1/2 tsp salt, divided
1/4 tsp oregano leaves
1/4 tsp pepper, divided
4 cutlets, pouned to 1/4" thick
1 tbsp plus 1 tsp EACH margarine+plain bread crumbs
2 tbsp plus 2 tsp white wine

Directions:

Spray 10" skillet with Pam and heat; add onion and garlic and cook, until softened. Add mushrooms and saute until browned, about 5 min. Remove from heat and stir in spinach, cheese, 1/4tsp salt, oregano, and 1/8 tsp pepper.
Sprinkle chicken breasts evenly with remaining salt and pepper.
Spread 1/4 of spinach mixture over each breast, leaving 1/2" border on all sides; carefully roll breasts to enclose filling and secure with a toothpick or small skewer.
Transfer rolls to baking dish.
On stove, melt margarine, stire in bread crubms, then sprinkle mixture evenly over rolls. Add wine to baking dish, cover with foil, and bake for 20 min; remove foil and bake until crumbs are lightly broned, 8-10 min.
