1 large cucumber
1 bell pepper
1 small onion
1 envelope unflavored gelatin
1 c. mayonnaise
Salt and pepper to taste

Directions:
Directions:
Peel cucumber and remove seeds.
Coarsely grate the vegetables, except for the onion, which is finely grated. Squeeze out the natural juices of the vegetables, saving out 2 T.
Soften gelatin in the 2 T. of juice. Melt in a double boiler until the gelatin is completely dissolved. Add it to the grated vegetables. Add mayo and mix, seasoning to taste.
Refrigerate over night before using.
