4 medium potatoes 2 TBL. lemon juice 1/2 cup butter melted 4 TBL. flour 1/2 cup finely chopped onion Parsley to taste-fresh and finely chopped Rosemary to taste-fresh and finely chopped 2 large eggs 1 tsp. salt 1/2 tsp. pepper 1/2 tsp. baking powder
Coarsely grate potatoes into large bowl. Toss with lemon juice to coat thoroughly; let stand 5 minutes and then drain well. Add melted butter, flour onion, egg, salt, pepper and baking powder to potatoes and mix well.
Fry small flattened scoops in well oiled moderate heat skillet until well browned on one side and then turn to brown reverse side. Keep warm in 300º oven until ready to serve.
Excellent with tart chunky applesauce and sausage for brunch or with Salmon and cranberries for supper.
