4 bone in chicken breast halves
2 TBL. flour
1/2 tsp. salt
1/4 tsp. black pepper
1 TBL. olive oil
8 oz. orzo, small pasta or rice
1 large onion cut in 1 " chunks
1-2 Granny Smith apples in 1' chunks
2 large tomatoes coarsely chopped
1/2 cup fat-free, reduced sodium chicken broth or white wine
1/4 chopped fresh mint
2 TBL. red wine vinegar
1 tsp cinnamon

Directions:
Directions:
Combine flour 1/4 tsp. salt and the pepper and dredge the chicken pieces in the flour mixtures. Brown the chicken in olive oil.

Add the onion to pan and brown. Put all other ingredients in large pan or casserole, mix well and bake at 325º until chicken is tender and flavors blended.

Serve with orzo, pasta or rice
