5 lbs. of red potatoes, partial peeled, cubed and boiled until done
1 8 oz. tub of sour cream
1 stick of butter or margarine
1/4 cup of heavy cream
about 4-6 green onions, diced
1 large jar of sliced or diced pimento's, thoroughly drained (either 6 or 8oz. jar)
salt & pepper to your taste
1 small block of extra sharp cheddar cheese, shredded (I prefer Kraft)

Directions:
When potatoes are cooked, thoroughly drain the them to ensure no water is remaining. You may want to put them in the strainer, over the pot back on the hot burner for a few minutes to allow the heat to dry them. In a mixing bowl, put in the stick of butter or margarine and add the hot boiled potatoes; mix well. Add heavy cream and mix well. Add sour cream----it is OK to add more sour creme if you like---it just makes them taste even better! Add diced onions on low speed and mix well. Add pimento's on low speed; mix well and then pour into a casserole dish and cover with the shredded cheese. Bake at 375 until cheese is golden bubbly!
