2 Med. Zucchini sliced 1/2" thick or coarse chopped,
3/4 cup shredded carrot
1/2 cup chopped onion
6tbl butter or margarine melted
2 1/4 cups herbed stuffing cubes
1 can cream of chicken soup
1/2 cup sour cream

Directions:
Directions:
Crisp cook zucchini in small amount of water and drain. Saute in 4 TBL. of the butter the carrots and onion. Stir in 1/2 of the stuffing cubes, soup and sour cream. Fold in zucchini. Place in 1 1/2 Qt. casserole. Melt butter and add 3/4 cup of the stuffing cubes. Toss gently and put on top of casserole. 350 for 30 minutes or until bubbly.
