"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for Roll-up Pancakes/Crepes, by Zita Schneider, is from The Madden Family Cookbook ,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
3 eggs 1 1/4 cups milk 3/4 cup sifted flour 1 T. sugar 1/2 tsp. salt
Beat eggs till thick and lemon-colored. Stir in milk. Sift dry ingredients; add to egg mixture, mixing till smooth. Pour batter on moderately hot buttered griddle in amounts to make crepe or plate-size pancakes. Turn when underside just begins to brown. Dust with powdered sugar and serve with fresh fruit, syrup or preserves.
These are a 3 generation favorite that the grandsons ask for. Thus the "roll-up" name. I always double the recipe.
