3 slices bacon
8 crimini mushrooms, or one large container button mushrooms
1 T. butter
1 T. chopped onion
3/4 cup shredded cheese

Directions:
Directions:
Cook bacon until crisp. Place on paper towels to drain. Dice and set aside.

Preheat oven to 400. Remove mushroom stems and set aside caps. Chop stems.

Saute onion and chopped stems in butter until softened. Remove from heat.

In bowl, mix together mushrooms, bacon, and 1/2 cheddar cheese. Scoop into mushroom caps and top with remaining cheese.

Bake for 15 minutes, or until cheese is melted.
