1 (3 pound) chicken, cooked and deboned
20 count package corn tortillas
1 (10 ounce) can diced tomatoes with green chiles
1 can cream of chicken soup
1 can cream of mushroom soup
1 onion, chopped
3 cups shredded Cheddar cheese

Directions:
Directions:
Preheat oven to 350. Layer 6 corn tortillas in 9 x13 casserole dish.
Saute onion in olive oil. Combine the tomatoes, chicken soup, mushroom soup and onion. Pour half of the soup mixture over tortillas. Add 1/2 chicken. Add another layer of tortillas. Layer the chicken pieces, half of the cheese and the remaining soup mixture.

Bake at 350 for 30-45 minutes, or until bubbly. Remove from oven and top with the remaining cheese and torn-up pieces of tortillas (3-6 tortillas, torn into fourths). Return to the oven until the cheese is melted, and tortillas are crispy.

Can be topped sour cream, guacamole, or salsa. I serve it with tortilla chips and shredded lettuce with tomatoes.
