1 (3 pound) whole chicken, cooked
1 onion, chopped
1 cup long-grained brown rice
1 pound smoked sausage, sliced
1 can chicken broth

Directions:
Directions:
Chop chicken. Saute onion in olive oil in large pot. Add 3 cups water, plus can of chicken broth. Add rice, chopped chicken and sausage. Let it come to a boil, then reduce heat to low and cover. Let it simmer for 45 min - 1 hour. If mixture is to watery or juicy, cook over medium heat, uncovered, until reaches the desired consistency. Stir often while cooking.

This is a very simple dish that my family loves. I use smoked turkey sausage.
