Lemon vinaigrette - see recipe, 2 15oz cans of white beans drained and rinsed or 2-1/2 cups of cooked pasta, 1/2 cup rough chopped tomatoes or cherry tomatoes cut in half. 1/2 cup chopped red or sweet onion, 1/2 cup chopped cucumber, 1/2 cup chopped green pepper, 1/2 cup sliced olives - green, black, or Kalamata, 1 cup crumbled feta cheese.

Prepare the lemon vinaigrette add 1T fresh minced oregano or 1/2 tsp dried,1T fresh minced parsley, and 1 extra garlic clove before whisking in olive oil. Add all ingredients in a bowl and toss with vinaigrette.
