4 Tilapia fillets, 1/4 cup white white, 1/4 cup fresh lemon juice, 2T capers, 2T chopped parsley, 4T butter

Directions:
Directions:
Add capers to small strainer and rinse under water to remove brine. Rinse and pat dry the tilapia filets, dust lightly with flour and shake off excess. Heat a saute pan to medium heat and add enough olive oil to lightly cover the bottom. Add the tilapia and saute 4-5 minutes on each side. Remove from pan and cover with foil to keep warm. Add white wine to pan and deglaze scrapping the bottom of the pan, add the lemon juice and reduce slightly. Reduce heat to low and whisk in 1T of butter at a time. Once butter is incorporated add capers and parsley, mix to combine. Serve sauce over fish.
