1 Red Pepper, 1 Yellow Pepper, Shallot, Lemon Juice, Olive Oil, Parsley

Directions:
Directions:
Roast both peppers under the broiler or on top burner if you have a gas stove, or on outdoor grill, until outside is charred. Place in bowl and cover with plastic, let rest for 10-15 minutes. Remove charred skin from peppers, then remove seeds. rinse peppers. Dice the peppers in 1/4" dice, finely dice 2T shallot or substitute sweet onion, mix together and add 1T lemon juice, 1T olive oil, and finely chopped parsley. Mix to combine.
