4 small or 2 large whole trout, 2 lemons, fresh parsley, fresh thyme

Directions:
Directions:
Heat grill to medium. Slice the lemons in 1/4" slices, salt and pepper the inside of the trout, add a layer of parsley - stalk and all, and fresh thyme- you can leave the thyme on the stems, add a layer of lemon slices, and more parsley and thyme on top of the lemon. Close fish and tie with butchers twine at 2" intervals to hold close. Rub the outside of trout with olive oil. Grill 5-7 minutes on each side in a closed grill. The skin will sear slightly. Remove from grill, remove twine, parsley, thyme, and lemon. Roll back skin and carefully pull the meat away from the bone with a spoon to serve.
