1 pkg. plain yellow cake mix
1/2 c. packed light brown sugar
2 very ripe bananas, peeled and mashed, about 1 c.
3/4 c. buttermilk
1/2 c. vegetable oil
3 large eggs
1 tsp. cinnamon

Directions:
Directions:
place rack in center of oven and preheat to350║. Lightly grease two 9 inch or 10 inch loaf pans with solid vegetable shortening, then dust with flour. Place the cake mix, brown sugar, bananas, buttermilk, oil, eggs and cinnamon in a large mixing bowl. Blend with electric mixer on low for 1 minute. Stop and scrape down the sides of the bowl. Increase mixer speed to medium and beat 2 minutes, scraping bowl again, if needed. The batter should look well blended and the bananas pureed. Divide the batter between the 2 pans and place in oven side by side. Bake until golden brown and toothpick inserted comes out clean; 40-45 minutes. Cool on rack for 20 minutes. Then run dinner knife around each pan edge and invert each loaf onto a rack to cool 30 more minutes.
