Ingredients:  
3 c. sweet corn, fresh or frozen is best, slightly blanched.
1 medium red onion, diced
1 red bell pepper, diced
3 or 4 Roma tomatoes, chopped, or cherry tomatoes quartered, at least 1 cup
1 small to medium jalopeno pepper, minced
4 T. fresh lime juice
salt and pepper to taste
Several dashes of Texas Pete or Louisiana hot sauce to taste.

Mix and chill for 1-2 hours before serving to let flavors mix. Serve with good tortilla chips.
