4 small yellow squash
large purple onion
4 peppers assorted colors
3 T olive oil
1 tsp salt
1/2 tsp pepper

Directions:
Directions:
Toss together in gallon zip lock bag. Spread on cookie sheet with sides. Roast at 450 stirring every 15 minutes until desired tenderness.
1 cup is 1 WW point
