1 lb. pkg. dry Pinto Beans
1 tbsp. Baking Soda
8 slices Bacon
1 Onion, diced
Salt and Pepper
(Garlic - optional)
Big Pot or Crock Pot

Directions:
Directions:
Soak Beans overnight in Water with Baking Soda - the next morning clean beans [rinse] and at 6 am put in large pot filled with Water 3 inches above beans. Take 8 slices of bacon cut in 1 inch pieces and put in pot. Add your Salt and Pepper to taste and Onion and bring the beans to boil - cover with lid and boil for 2 hours and then turn down to low for 2 more hours. You have to stir every 1/2 hour to keep beans from sticking. Now, if you use a crock pot put the Salt and Pepper, Onion and Bacon in the bottom of pot and then put Beans in and fill with water 1 and 1/2 inches from top of pot. Put the crock pot on high for 6 hours stir every hour, then put on low for 6 more hours! Enjoy!

David has used Mallie's recipe over the years and then adapted it to go into the crock pot. We've all enjoyed his crock pot version since we use it a lot at deer camps or when we are fishing. David remembers Mom cooking this with her soft fried potatoes and so does Roy. It was one of their staples growing up.
