2 Zucchini cut in thin slices at a angle
2 tomatoes (plum work nicely) in slices
2 yellow squash in slices (sliced at angle)
2 Tbsp Parmesan cheese grated
4 Tbsp fresh chopped mixed herbs (oregano, basil, thyme)
Olive oil
salt and pepper to taste

Directions:
Layer the zucchini slices, tomatoes, and yellow squash (in that order, repeating until pan is filled). Season the vegetables with salt and pepper, fresh herbs and olive oil. Sprinkle with Parmesan cheese. Bake at 375 for 25 minutes. Serve.
