3 large green peppers
1 lb. ground beef
1 small diced onion (about 1/3 cup)
1 cup cooked rice (I use brown instant)
1 Tbsp. minced parsley
1 tsp. garlic salt (or 1 clove garlic and 1 tsp. salt)
1/2 tsp. black pepper
1 8 oz. can tomato sauce

Directions:
Directions:
Halve peppers LENGTHWISE and seed. Parboil or heat in microwave in a little water until the skin turns color. Saute the hamburger and onion until the burger loses color. Stir in the cooked rice, spices, parsley, and most of the tomato sauce. Heap the boats high. Bake at 350 degrees for about 40 minutes. Then spoon a little tomato sauce and some shredded cheese on each boat. Bake for about 5 more minutes.

This has less rice and less green pepper for the meat lovers in the family. You can add a small can of chopped mushrooms, also.
