1/3 c. coarse yellow cornmeal
1 1/2 T. Lemon-pepper
2 tsp. kosher salt
1 egg
4, 6 oz. catfish fillets
1 each, shallot and sweet gherkin pickle, minced
1/2 T. capers, fresh parsley, fresh chives, all fine chopped, and lemon juice
1/2 c. mayo

Directions:
Heat oven to 400. Mix first 3 ingredients. In another bowl, beat egg and 1 T. water. Dip fillets (towel dried) in egg; coat with cornmeal. Put on rack on cookie sheet. Spray fish with thin coat of cooking spray. Bake 15 min. Mix next 7 ingredients for sauce. Serve with catfish.
