1 pound small sweet potatoes
3 T olive oil
1 clove garlic, minced
1/4 tsp. salt
cracked black pepper

Directions:
Directions:
Preheat oven to 425. Line a 15 x 10 x 1 inch baking pain with parchment paper . Scrub potatoes; cut lengthwise into quarters. Cut each quarter into 2 wedges. Arrange in single layer on pan. Next combine olive oil, garlic and salt. Brush mixture onto both sides of potatoes. Bake for 35 min. or until very brown and crisp on edges, turn once. Sprinkle with pepper.
