3 cans veg all, drained
1 c. chopped onion
1 can sliced water chestnuts
1 c. grated cheddar cheese
3/4 c. mayo
1 roll Ritz crackers
1 stick margarine, melted

Directions:
Directions:
Mix first 5 ingredients together and pour into a casserole dish. Crumble Ritz crackers and mix with margarine. Drop Ritz cracker mixture over the vegetable. Bake at 350 for 30 minutes.

This is a personal favorite of our family. I have to make it every Thanksgiving and Christmas along with the sweet potato casserole and the red velvet cake.
