5 c. slightly dry bread cubes (= ca. 10 trimmed standard-size Pepperidge Farm slices)
2 c. cooked shrimp (or crab, or tuna)
1 3-oz. can mushrooms, drained
1/2 lb. sharp cheddar, shredded
3 eggs
1/2 tsp. salt
1/2 tsp. dry mustard
Dash pepper
Dash paprika
1 1/2 c. milk

Directions:
Directions:
Place half of bread cubes in greased 11 X 7 X 1 1/2" baking dish. Add: shrimp, mushrooms, half of cheese. Top with remaining bread and cheese. Beat together eggs and seasonings; add milk and pour over all. Bake 45 - 50 minutes or until just set in 325 degree oven.
NB: 2 C cooked shrimp = ca. 1 3/4 lb. medium raw shrimp.

This recipe comes from Mary Tower, my upstairs neighbor in Bryn Mawr & nowadays Kathy & Hubby's house- & cat-sitter. It's kissing kin to Mock Cheese Soufflé, though that recipe came from Penn Dutch friends.
