12 small red potatoes (about 1 1/2 to 2 lbs)
1 Tbsp olive oil
1/2 cup mayonnaise
1 cup Cheddar cheese
1/2 lb bacon, cooked and crumbled
1/2 cup minced green onions.
2 Tbsp chopped fresh basil (2 tsp if using dried)

Rub potatoes with olive oil, and place on an ungreased baking sheet.
Bake at 400 for 45 min. or until tender. Let cool.
Cut each potato in half crosswise; cut a thin slice from the bottom of each half, forming a base to stand on if necessary. Using a teaspoon, scoop out the potato pulp, leaving at least a 1/4 inch thick shell. Save the pulp.

Stir together the potato pulp, 1/2 cup mayonnaise, 1 cup shredded Cheddar cheese and the next 3 ingredients in a large bowl and mix well. Spoon the mixture evenly back into each potato shell. Place on a lightly greased baking sheet.
Broil, 5 inches from the heat fro 3 to 5 min. or until lightly browned.

Filled, unbroiled potatoes may be covered and chilled up to 2 days. Let stand at room temp for 15 min and broil as above.
