Peeled sliced cucumber
Tomato cut in chunks
Salt
Olive Oil
Garlic
Green pepper (optional)

Directions:
Directions:
In a glass bowl combine cucumber and tomato. Sprinkle with salt. Let stand a few minutes. Pour 1/4 to 1/2 cup water over vegetables. Drizzle with olive oil. Chop to fine dice 1-2 cloves garlic or 1/8-1/4 tsp dried, minced garlic. Toss garlic with salad. Let stand in refrigerator for a few minutes or up to 1 hour. Tomato juices will make a dressing.
Amounts are flexible. My family likes lots of garlic. We eat this often during the summer.
