1 small potato, peeled and thinly sliced
1/4 cup chopped onion
1 Tbsp cooking oil
1 small yellow summer squash, sliced
1/4 tsp salt
1/8 tsp pepper
Dash paprika

Directions:
Directions:
In covered skillet over medium-low heat, cook potato and onion in oil for 12 minutes. Add squash, cook, uncovered for 8 to 10 minutes or until the vegetables are tender, stirring occassionally. Season with salt, pepper, and paprika.
