3 T. butter (mom used margarine
3 T. flour
2-3 c. milk
salt and pepper to taste
1 pkg. frozen peas
cooked and quartered new potatoes

Directions:
Directions:
Melt butter in skillet and add flour. Stir until golden brown. Gradually add milk, stirring constantly to avoid lumps. Add peas and serve. Mom used to serve this with fish.

Mom used to say farmers hoped to harvest enough fresh peas and potatoes to make this dish the first part of July.
