2 egg whites
1/4 tsp salt
4 Tbsp sugar
2 Tbsp lemon juice
1 1/2 cup fruit pulp, such as skinned, seeded and mashed plums.

Directions:
Directions:
Beat egg whites with salt until stiff but not dry, Beat in sugar. Add lemon juice; fold in fruit pulp, the continue beating until light and fluffy, Pour into a greased baking dish. Set baking dish in a pan of hot water and bake at 300 degrees for 25 to 30 minutes or until a clean knife inserted in the center comes out clean. Serve with whipped cream custard sauce if desired.
