4 lbs. sweet potatoes, peeled, cut into 1 1/2" chunks
1/2 c. packed brown sugar
4 tbsp. margarine or butter
3/4 tsp. salt
1 1/2 tsp vanilla extract
coarsely ground black pepper

Directions:
Grease 13"x9' baking dish. Place potatoes in dish, cover with foil, bake 20 mins. Meanwhile, in 1 qt. saucepan, combine brown sugar, butter, and salt. Cook over med. heat until it comes to a simmer, stirring frequently, and simmer 1 minute. Remove from heat, stir in vanilla. Keep warm. Remove dish from oven. Spoon sugar mixture evenly, stir to coat. Bake uncovered 40-45 minutes longer or until potatoes are tender and glazed, basting with juices in pan halfway through baking. Remove from oven and let stand 10 minutes before serving. To serve, sprinkle with black pepper.
