3 pounds lean ground beef
1 quart water
3 tsp. salt
1 tsp cumin
1 tsp red pepper
1 tsp black pepper
1 Tbsp sugar
1/2 cup vegetable oil
6 Tbsp chile powder
10 finely chopped cloves of garlic
1 tsp margorum
3 tbsp paprika


3 Tbsp flour mixed with 6 tbsp cornmeal
combined with 2 cups water.

Directions:
Directions:
When oil is hot in 6 quart pot, add the meat and sear over high heat, stirring constantly until meat is gray not brown.

Add 1 quart water and simmer for 1 1/2 to 2 hours

Add all other ingredients except flour and cornmeal and simmer another 30 minutes.

Skim off fat before adding thickeners.

Add flour and cornmeal with water and cook 5 more minutes

Makes a fairly hot chile
